1.对血液系统的影响
（1）抗凝血作用 300％木耳煎剂1ml／100g灌胃，连续20d,实验结果表明，木耳能延长白陶土部分凝血活酶时间12.06s，提高血浆抗凝血酶Ⅲ活性，具有明显的抗凝血作用。黑木耳多糖50mg/kg给小鼠静注、腹腔注射、灌胃，均有明显的抗凝血作用；在体外实验中，黑木耳多糖亦有很强的抗凝血活性。
（2）抗血小板聚集作用 黑木耳的磷酸缓冲盐水提取物在试管内明显抑制ADP引起的血小板聚集，并阻断低于16μmol／L的ADP激活血小板释放5-羟色胺，黑木耳抗血小板作用的有效成分是水溶性的。人口服70g黑木耳后3h内即开始出现血小板功能降低，并持续24h。木耳菌丝体酸提取物体内（大鼠静注10g／kg或灌胃10g／kg连续15d），体外（25mg／ml，50mg／ml及100mg（菌丝体）／ml）能明显抑制ADP诱导大鼠血小板聚集。醇提取物5g／kg,7g／kg灌胃，共15d,能明显缩短红细胞电泳时间。黑木耳酸性杂多糖小鼠腹腔注射试验结果表明，该多糖具有促进白细胞增加，抗凝血和降低血小板的作用，其活性随着多糖分子量和糖醛酸含量降低而增大，即生物活性依赖于多糖在水中的溶解度。
（3）抗血栓形成 兔口服木耳多糖18.5mg/kg，可明显延长特异性血栓及纤维蛋白血栓的形成时间，缩短血栓长度，减轻血栓湿重和干重，减少血小板数，降低血小板粘附率和血液粘度，并可明显缩短豚鼠优球蛋白溶解时间，降低血浆纤维蛋白原含量，升高纤溶酶活性，结果表明，木耳多糖有明显的抗血栓作用。
（4）升白细胞作用 小鼠腹腔注射黑木耳多糖2mg/只，连续7d，有较好地对抗环磷酰胺引起的白细胞下降的作用。
2.对免疫功能的促进作用 黑木耳多糖能增加小鼠脾指数、半数溶血值（HC50）和玫瑰花结形成率，促进巨噬细胞吞噬功能和淋巴细胞转化等。木耳菌丝体250mg／kg，连续7d小鼠腹腔注射能明显提高外周血T淋巴细胞百分率；400mg/kg、
800mg／kg皮下注射，共7d，使环磷酰胺引起的半数溶血值HC50减少恢复正常。
3.对核酸和蛋白生物合成的影响 黑木耳多糖100μg对人淋巴细胞脱氧核糖核酸和核糖核酸合成有显著促进作用。黑木耳多糖给小鼠腹腔注射100mg／kg连续4d，对3H亮氨酸掺入小鼠血清蛋白有较弱的促进作用。
4．降血脂及抗动脉粥样硬化的作用 木耳煎剂30g／kg，连续灌服20d，木耳多糖28mg／kg，连服8d，均可明显降低高脂血症大鼠血清三酰甘油（甘油三酯）和血清总胆固醇（TC）含量，提高血清高密度脂蛋白胆固醇（HDL-C）与总胆固醇比值，且有降胆固醇作用。木耳多糖180mg／kg灌服可防止高胆固醇引起的小鼠高胆固醇血症的形成。每日在喂胆固醇同时，加喂黑木耳2.5g／只，共90d,有降低兔血浆胆固醇、过氧化脂质（LPO）、血栓素A2（TXA2）的含量，提高前列环素／血栓素A2（PGI2／TXA2）比值，减轻动脉粥样硬化的作用。
5．延缓衰老作用 每日给家兔黑木耳2.5g/只，共90d,可降低动脉粥样硬化家兔氧自由基，肝、心、脑组织脂褐质，血浆过氧化脂质，血浆胆固醇含量及减轻动脉粥样硬化病变的作用。提示黑木耳可能通过降血浆胆固醇，减少脂质过氧化产物脂褐质的形成，以维护细胞的正常代谢，显示有延缓衰老作用。运用化学发光分析法，研究了2.5％黑木耳水提取物50μl，800μl,1000μl对H2O2或由酶体系及非酶体系产生的超氧化物自由基（O-2）有清除作用，清除能力与用量之间呈量效关系，提示黑木耳水提取物中含有抗氧化作用的成分。黑木耳多糖100mg/kg，腹腔注射，连续7d，可使小鼠在水中平均游泳时间延长50.40％，有增强小鼠抗疲劳的能力；还能明显降低小鼠心肌组织脂褐质含量；能明显增加小鼠脑和肝组织中超氧化物歧化酶（SOD)的比活力；对小鼠离体脑中单胺氧化酶B（MAO-B）活性有明显抑制作用，抑制强度随浓度增加而加强，并能增加果蝇飞翔能力。黑木耳多糖能明显延长果蝇平均寿命，为对照组的1.26倍，口服黑木耳多糖40d后，果蝇脂褐质含量有所降低。
6．抗辐射及抗炎作用 小鼠腹腔注射木耳多糖100mg／kg，连续7d对60Coγ射线照射有拮抗作用，使小鼠存活率提高1.56倍，腹腔注射60mg/只，对大鼠由鸡蛋清引起的足跖肿胀有一定的抗炎症作用。
7．抗溃疡作用 黑木耳多糖以每日70mg/kg灌胃，连续2d，能明显抑制大鼠应激型溃疡的形成；以每日165mg/kg灌胃，连续12d,能促进醋酸型胃溃疡的愈合，对胃酸分泌和胃蛋白酶活性无明显影响。
8．降血糖作用 木耳多糖33mg／kg或100mg／kg灌胃，能明显降低四氧嘧啶糖尿病小鼠血糖水平，口服多糖后4～7h降血糖作用最显著；还能减少糖尿病小鼠饮水量。
9．抗生育作用 黑木耳多糖8.25mg/kg给小鼠腹腔注射，抗着床和抗早孕效果最明显，终止中期妊娠作用略差些，但对孕卵运输则无效。
10．抗癌、抗突变作用 木耳热水提取物对瑞士小鼠肉瘤S180抑制率为42.5％～70％，对艾氏腹水癌抑制率为80％。黑木耳多糖200mg/（kg·d），连续10d有对抗环磷酰胺所致小鼠骨髓微核率增加的作用。
11．抗菌作用 木耳中分离的黑刺菌素有抗真菌作用。
12．毒性 黑木耳多糖小鼠腹腔注射的LD50为789.60±92.19mg／kg。
