禁忌：大便燥结者慎食。
莲子心
莲子心苦、寒、无毒，入心、肾，清心火，沟通心肾，治热渴心烦、吐血、心热淋浊、失眠等症，便溏者慎用之。
为了食用方便，最好购买钻心莲子，这样没有苦味，省工省时味道好。
莲子粥 莲子粥：基本材料 嫩莲子20克，粳米100克
将嫩莲子发胀后，在水中用刷把擦去表层，抽去莲心冲洗干净后放入锅内，加清水在火上煮烂熟，备用将粳米淘洗干净，放入锅中加清水煮成薄粥，粥熟后掺入莲子，搅匀，趁热服用。
莲子红枣汤：用料 莲藕两大截、红枣4两、莲子2两、冰糖适量
1、莲藕去皮切块洗净沥干。2、红枣和莲子用水浸泡至软后捞起。3、将藕块和红枣、莲子加冰糖与水煮1个半小时，至食材软透即可。可补血润肤，是长期疲劳过度，消耗精神的药补食品
红枣银耳莲子汤 红枣银耳莲子汤：用料 红枣100克，白木耳50克，莲子100克，红糖适量。
将红枣、白木耳、莲子洗净后泡水。锅中加适量的水，放入3种材料，煮熟后，加糖调味
银耳莲子羹：莲子100克、干银耳15克、鲜百合120克、香蕉2根、枸杞5克。冰糖100克、水3杯。
干银耳泡水2小时，拣去老蒂及杂质后撕成小朵，加水4杯入蒸茏蒸半个小时取出备用。新鲜百合拔开洗净去老蒂，香蕉洗净去皮，切为0．3cm小片。将所有材料放入炖盅中，加调味料入蒸笼蒸半个小时即可。

莲肉糕：莲子肉、糯米（或大米）各200g，炒香；茯苓100g（去皮）。共研为细末，白糖适量，一同拦匀，加水使之成泥状，蒸熟，待冷后压平切块即成。 源于《士材三书》。茯苓为补脾利湿药，与莲子肉、糯米同蒸糕食，则补脾益胃之功尤著。用于脾胃虚弱，饮食不化，大便稀溏等。
脾益胃散：莲子肉、芡实、扁豆、薏苡仁、山药、白术、茯苓各120克，人参15克（或党参60克）。共炒研末。临用时可加适量白糖。每次用15~30克，以温开水冲调服。
莲子百合麦冬汤：莲子15克（带心），百合30克，麦门冬12克。加水煎服。本方用带心莲子以清心宁神，百合、麦门冬亦有清心宁神之效。用于病后余热未尽，心阴不足，心烦口干，心悸不眠等。4.莲子粥：莲子20克发胀后，在水中用刷把擦去表层，抽去莲心冲洗干净后放入锅内，加清水在火上煮烂熟，备用。粳米100克同煮，淘洗干净，放入锅中加清水煮成薄粥，粥熟后掺入莲子，熟后加冰糖或白糖再稍炖既可食用。
