存放时间越久，口味越香醇。这是因为它具有得天独厚的地理环境与独特的精湛工艺。镇江香醋以优质糯米为主要原料，采用优良的酸醋菌种，经过固体分层发酵及酿酒、制醅、淋醋三大过程，40多道工序，历时70多天精制而成，再经6-12天储存期，然后才出厂。
镇江醋又称镇江香醋。“香”字道明镇江醋比起其他种类的醋来说，重点在有一种独特的香气。镇江醋属于黑醋、乌醋，其制作方法，是以糯米加入醋酸菌，精酿陈置而成。
据日本一项有关食醋类的研究指出，镇江醋有较高的氨基酸含量，有助抑制人体老化，预防各种老年疾病。
镇江醋影响到当地饮食。镇江地区的食品以“肴、点、面”驰名。“肴”是肴肉，“点”是汤包、蒸饺、烧卖、干丝等点心，“面”是用肴汤为底煮出的面，又称“锅盖面”。
当地人煮这些菜肴时，多以镇江醋沾滴浇淋，镇江醋亦为日常煮食的常用调味品，或是作为佐膳汁料，其中一种是在吃大闸蟹时，蘸上加入姜丝的镇江醋，以中和蟹的寒性。
